Roasted Sweet
Potato Salad Sans Mayo!
What You Need
- 4-6
Large sweet potatoes or yams
- 3
Tbsp olive oil
- 3
green onions, chopped
- 1/4
cup fresh parsley chopped
- 1/4
cup each dried cranberries and raisins
- 1/4
cup pine nuts or sunflower seeds
- Sea
salt and freshly ground pepper
Dressing
- 1/4
cup olive oil
- 2
tbsp apple cider vinegar
- 1
tbsp Dijon mustard
- 1
teaspoon of un pasteurized honey
- 1
tbsp lemon juice
- salt
and fresh ground pepper
- 1
tbsp lemon juice
What You Do
- It is up to you if you want to peel the potatoes or not, I prefer the skin.
The skin is where the fibers at!
- Cut potatoes into cubes, nice bite size pieces
- Lightly coat in olive oil and some salt and pepper
- Line a baking sheet with parchment paper and lay the potatoes out
- Bake for 20-25 mins on 400 (bake until tender, but don’t over cook them)
- Remove from oven and let them cool
- Combine all the dressing ingredients and whisk until everything is blended.
- Add he potatoes to a large bowl and coat with dressing, toss easily as the
potatoes are delicate!
- Can keep in the fridge for a few days
